These Apple and Cinnamon Muffins are moist, have a subtle cinnamon flavor, and the perfect texture. No mixer or scales are needed, this really probably is the easiest Apple and Cinnamon Muffin recipe your ever bake! Prep time - 10 minutes INGREDIENTS 1 cup of apple sauce 1 egg, lightly whisked 2 cups self-raising flour 1 tsp ground cinnamon METHOD  Preheat oven 160ºc / 180º fan and grease your muffin tray Put your apple sauce and whisked egg into a bowl and mix well Then add the rest of the ingredients and mix until all is combined Pour the mixture evenly into your prepared muffin tray and bake in the oven on the middle shelf for approx 20-25 minutes or until a skewer/cocktail stick comes out clean. If you find your muffins browning before they are baked, cover loosely with some foil Leave your muffins in the muffin tray for approx 10 minutes before removing onto a wire cooling rack

Makes 2 Cinnamon Buns Calories per bun approx 170  INGREDIENTS ½ cup self-raising flour (approx 62g) ½ tsp baking powder 3 tbsp milk approx (approx 45ml) 1 tsp cinnamon 1 tbsp sultanas (approx 25g) METHOD Preheat oven 180ºc  / 160º fan Mix all the ingredients together Bring the dough together with your hands, you may need a little flour if dough is sticky, make two balls and place onto a greased/lined baking tray or pop into a muffin tray (which is what I used) Bake on the middle shelf for approx 15-20 minutes or until golden Leave to cool for 5 minutes then transfer to a wire rack to cool completely

Wholemeal Dairy Free Chewy Apple and Cinnamon Oat Cookies

NO ADDED SUGAR - FAT FREE - DAIRY FREE Without Sultanas  These wholesome cookies make the perfect snack to keep you going between meals or as an on the go breakfast! They're soft and delightfully chew, yet firm enough not to make a mess. With Sultanas  INGREDIENTS 1 egg  280g (approx) jar Apple sauce 1 tsp cinnamon 1 ¼ cups oats ½ cup plain wholemeal flour (sultanas optional) METHOD Preheat oven 180ºc / 160º fan Mix all ingredients together in a bowl Use a spoon to scoop the mixture into mounds/balls on the baking tray making sure you leave enough room between each cookie. The mixture will be sticky. Then using the back of a spoon flatten down each one to make a cookie shape. I find using a metal spoon dipped in cold water helps with this mix. Bake for 25-30 minutes, allow to cool for 10 minutes the carefully place on a cooling rack

Fruit and Veggie Cinnamon Muffins

These muffins are deliciously tasty with a subtle kick of cinnamon with every mouthful. They are fat free with no added sugar which make them perfect for snacking on when hunger strikes! They have a lovely chewy outer crust to them and mouthwatering moist tasty centre, which will make hard to resist a second helping! YOU WILL NEED A BLENDER FOR THIS RECIPE INGREDIENTS 75g apple peeled, cored and roughly chopped 50g carrot grated 50g banana 1 egg 1 tsp cinnamon 100g self-raising flour ½ tsp baking powder (optional) METHOD Preheat oven 180ºc / 160ºfan and grease your muffin tray Blitz apple and banana in your food blender/processor to make a puree Grate your carrot In a bowl add the puree and egg, whisk until both are combined Sieve in the dry ingredients, mix well Fold in the grated carrot Pour the mixture evenly into your muffin tray Bake in the oven on the middle shelf for approx  25-30 minutes

Cranberry and Fudge Chewy Spiced Oat Bake - Flourless and Healthy

These cookies taste just like there namesake! Plenty of sweet carrot with hearty oats accompanied with that lovely taste of cinnamon, which makes just want to go back for seconds.  The cookies can be stored in an airtight container for up to a week, but believe me they won't last long! CALORIES AT BOTTOM OF RECIPE INGREDIENTS 50g oats (3/4 cup) 60g grated apple (skin on or peeled, your choice) 1 tsp baking powder 1 tsp ground cinnamon 1/2 tsp mixed spice 3 tbsp fat free natural/greek yogurt 1 egg (medium) 1 tbsp honey (optional) METHOD 1. Preheat your oven at 180 degrees 2. In a mixing bowl add your grated apple, mixed spice and cinnamon, stir until apple is coated in spices 3. A sugar-free biscuit Crumbly, oaty and chewy, everything you could want in a biscuit! INGREDIENTS 50g porridge oats 50g wholemeal flour 50g fruit purée 50g light olive spread, melted 1 tsp baking powder 1 tsp ground cinnamon 1/2 tsp mixed spice (Sultana’s optional, I put a few in) METHOD   1. Preheat oven to 190c/170 fan/gas 5 2. Line to baking trays with grease proof paper 3. Place all the ingredients into a mixing bowl and mix well until all is combined 4. Place walnut size portions of the mixture onto your baking tray leaving room between each one. Flatten slightly using the back of a teaspoon or fork 5. Place biscuits in the oven for approx 15 minutes or until they start to take on a golden colour.  6. Leave the biscuits on the tray to cool and to firm up.

These bars have just a hint of sweetness from the honey and a little bit of spice that comes from the cinnamon Makes about 6 nice sized bars INGREDIENTS 1 ripe banana, well mashed (I used a mini food processor) 1 tbsp melted coconut oil 1/2 cup oats 1 1/2 tsp honey 1/2 tsp cinnamon I added these extras into my bars which is optional 1 tbsp pumpkin seeds 1 tbsp sunflower seeds 1 tbsp heaped dried cranberries METHOD 1. Scrumptiously Healthy Christmas Cake - sugar free - fat free - egg free

This is my take on a healthy Christmas Cake, its packed full  of juicy fruit and has all the taste of the festive period. Tastes delicious as it is, or if you wanted to to, you could have with some nice warm homemade healthy custard. INGREDIENTS 200g porridge oats 250g carrots, coarsely grated 2-3 tsp ground cinnamon (dependent on how much you like cinnamon) 1-2 tbsp honey  2 large eggs beaten 6 walnuts chopped (optional) METHOD 1. Preheat the oven to 200c/fan 180c/gas 6 and line a baking tray with some grease proof paper 2. Put all the ingredients into a large mixing bowl and mix until everything is well combined 3. Scoop your mixture into your prepared tray and flatten down 4. Place in the oven on the middle shelf and bake for approx 15 minutes, or until a golden brown 5. Leave to cool for about 10 minutes, transfer to a cooling rack to cool completely, then cut into slices

Healthy Oat and Cinnamon Biscuits - just 4 ingredients!

 This recipe does require a mini food processor for best results, but if you don't have one don't worry using the traditional method of bowl and wooden spoon works also, but you may find you might not get as many biscuits as your oats would not have broken as they would have in a processor. Approx 30 calories per biscuit INGREDIENTS 40g oats 1 small egg 1/2 tsp baking powder 1 tsp ground cinnamon To sweeten these biscuits you could add a little honey, sugar or sweetener, but remember the calories would be more METHOD 1.Preheat oven to 180c 2. Line a baking tray 3. Place all your ingredients into the mini blender and blitz until combined, but not so much that your mixture becomes a smooth paste, you want to keep it oaty 4.
