Homemade Chocolate Rice cakes - 2 ingredients - low calorie, high fibre, 100% tasty & guilt free

              These are ideal as a snack between meals or as your evening supper INGREDIENTS  2x Lidl salted rice cakes 4 chunks Cadbury's 30% less sugar chocolate METHOD Melt the chocolate in the microwave, 10 seconds at a time as you don't want to burn your chocolate, then spread evenly on each rice cake, leave to set  (to be accurate regarding calories, melt just two chunks at a time) 26 calories per rice cake 18 calories per chunk of chocolate Each rice cake with chocolate is 62 calories each  TOTAL CALORIES - 124 CALORIES 

Hot Fiery Ginger Sugar Free Wholemeal Digestive Biscuits

INGREDIENTS 1 cup wholemeal flour ½ tsp baking powder ¼ cup of butter (50g) 2 tbsp water 1 heaped tsp ground ginger 1 tbsp heaped of chopped crystallised ginger (I used Whitworths as it was a lot less sugary) cook time 15-20 minutes METHOD Preheat your oven to  190' C (375'F) and line your baking tray with some grease proof paper Combine the flour, baking powder, ground ginger and chopped ginger in a mixing bowl. Add the butter and water and knead into a smooth ball of dough (you may need to add more water) Roll out the dough on a floured surface, to about 0.5cm thickness. Cut into circles using a cookie cutter. Bake on the prepared tray for approx 15-20 minutes or until golden brown Allow to cool, on the trays before storing

Crunchy, Chewy Low Sugar Cheerio Marshmallow Breakfast Bars

Marshmallow Bars INGREDIENTS 40g Cheerio's - less than 5% sugar 40g sugar free marshmallows METHOD Melt the marshmallows in a glass bowl in the microwave. This should only take 10-15 seconds! Once melted, give it a quick stir. I'd recommend using a silicone spatula, as it makes the melted marshmallow easier to work with.  Add the Cheerios to the melted marshmallows and stir well. You will need to move quickly, as the marshmallow will stiffen as it cools. If you should need to, return the mix to the microwave for approx 5 seconds at a time, to loosen the mixture up. Tip the Cheerio-marshmallow mix into a rectangular/square dish, and flatten. You may need to use a spoon or knife heated in some hot water for this bit. It makes the mix much easier to spread. If for any reason you should run into difficulty, and the mix becomes too stiff, just pop it back in the microwave for 5 seconds. Cover with clingfilm and place in the fridge to set.
