Wholesome Fiery Ginger Oat Biscuits that pack a flavoursome punch thanks to the mix of fiery ginger and ground ginger I use. Serves 12 Prep time 10 minutes Cook time 10-15 minutes  INGREDIENTS 75g self-raising flour 75g porridge oats 75g low fat olive spread or spread of your choice 1 tsp baking powder 1 tablespoon honey 2 tablespoons semi-skimmed milk Approx 2 heaped tablespoons of Chopped  Fiery Ginger METHOD 1. Preheat oven to 180c / Gas mark 4 2. Line a baking tray with grease-proof paper 3. Sift the flour and baking powder into a bowl 4. Stir in the porridge oats and fiery ginger 5. Melt the olive spread, honey and milk in a saucepan and stir until heated  through 6. Add to the dry ingredients and mix well until all is combined 7. Baked Banana Cinnamon & Sultana Oats - an explosion of scrumptiousness!

The perfect healthy breakfast muffin on a cold winters morning, ideal to eat on the way to work or on the school run. This recipe is so simple it takes no more than 10 minutes to prepare and can be baking while you get ready for your day ahead. These muffins are delicious 10 minutes after coming out of the oven with the warm juicy sultana's and the subtlety of the cinnamon. INGREDIENTS 1 banana 100g low fat greek yogurt 1 egg 60g oats 1/2 tsp cinnamon 1 heaped tbsp of sultana's METHOD 1. Preheat your oven to 160 fan / 180c  2. Mix all the ingredients together, then spoon into a muffin tray or small baking dish (cooking time may vary if baking in a dish) 3. Bake in the oven on the middle shelf for approx 20-25 minutes or until golden brown 4. Turn out carefully onto a wire rack to cool

Healthy Carrot Cake - sugar free, fat free, egg free and only 6 ingredients!

INGREDIENTS 1 mug of boiling water 3/4 mug sultana's 150g finely grated carrot 1tsp mixed spice 1tsp ground cinnamon 1tsp baking powder 2 mugs self-raising flour METHOD Preheat oven 180 fan Grease & line a loaf tin In a mixing bowl place the sultana's and boiling water, leave to soak until water has cooled Once cooled, stir in the carrot, then sieve in the flour, baking powder, mixed spice & cinnamon. Mix well until all the ingredients are combined. If you find the mixture to dry just add a little more water.  Scoop into your loaf tin and place in the oven on the middle shelf and bake for approx 30 minutes, or until cooked. 3 Ingredient Date Slice Ingredients 1 large ripe banana Porridge oats, enough to bind the banana (approx cup & half) About half a cup of chopped dates Method Preheat the oven to approx 200/180 fan Mash the banana up in a bowl Add porridge oats and dates, mix well. Add as much porridge oats as needed to bind together. Turn out onto a non stick baking tray, press the Oat slice down, it should be about 1cm thick. Place into oven on middle shelf for approx 15-20 minutes or until the edges start browning. Leave to cool for about 10 minutes before cutting into slices.
