Sweet Cinnamon Potato Biscuits

A super quick recipe, ready on 30 minutes! Just 4 ingredients needed! These biscuits are light, fluffy and take on a lovely orange colour from the sweet potato.  All the sweetness in these biscuits is from the potato and cinnamon, if anymore sugar was added they would be far to sweet. INGREDIENTS 150g self raising flour 150g sweet potato 70g butter, melted Cinnamon - as much as you fancy METHOD Preheat oven 190ºc / 170º fan Cook your sweet potato your preferred way. I cooked mine in the microwave for approx 6-10 minutes Once the potato is cooked and your able to handle it, scoop out the insides onto a bowl and mash it up so it is nice and smooth Add the melted butter and give it a quick stir Then add the self raising flour and cinnamon  Mix well until everything is combined and you have a dough Flour a clean work surface and roll out your dough, using a cutter of choice cut out your biscuits and place them on your pr...

Hot Fiery Ginger Sugar Free Wholemeal Digestive Biscuits

INGREDIENTS 1 cup wholemeal flour ½ tsp baking powder ¼ cup of butter (50g) 2 tbsp water 1 heaped tsp ground ginger 1 tbsp heaped of chopped crystallised ginger (I used Whitworths as it was a lot less sugary) cook time 15-20 minutes METHOD Preheat your oven to  190' C (375'F) and line your baking tray with some grease proof paper Combine the flour, baking powder, ground ginger and chopped ginger in a mixing bowl. Add the butter and water and knead into a smooth ball of dough (you may need to add more water) Roll out the dough on a floured surface, to about 0.5cm thickness. Cut into circles using a cookie cutter. Bake on the prepared tray for approx 15-20 minutes or until golden brown Allow to cool, on the trays before storing

Low Fat Mini Cheddars, a tasty snack of healthy crunchiness

These homemade Mini Cheddars contain no additives and are free from artificial colours or flavours. INGREDIENTS  100g of Eatlean Protein Cheese, grated (or any cheese of your choice) 50g of salted butter ( I used low-fat olive spread) 100g of plain flour 1/4 tsp of salt METHOD  Preheat oven to 180c Mix all the ingredients in a food processor Knead together lightly and roll out the dough onto a lightly floured surface, about 3mm thick. Using a small cutter, cut out the cheddars, gather rest of the dough up and repeat. Place the cheddars on a silicon mat or grease proof paper. Bake in the oven for approx 15 minutes Leave to cool
