The perfect healthy breakfast muffin on a cold winters morning, ideal to eat on the way to work or on the school run.
This recipe is so simple it takes no more than 10 minutes to prepare and can be baking while you get ready for your day ahead.
These muffins are delicious 10 minutes after coming out of the oven with the warm juicy sultana's and the subtlety of the cinnamon.
INGREDIENTS
1 banana
100g low fat greek yogurt
1 egg
60g oats
1/2 tsp cinnamon
1 heaped tbsp of sultana's
METHOD
1. Preheat your oven to 160 fan / 180c
2. Mix all the ingredients together, then spoon into a muffin tray or small baking dish (cooking time may vary if baking in a dish)
3. Bake in the oven on the middle shelf for approx 20-25 minutes or until golden brown
4. Turn out carefully onto a wire rack to cool
