Super simple to make No kitchen scales required just a set of measuring spoons INGREDIENTS 3 tbsp sugar (36g) 3 tbsp butter (42g) 1 egg, medium 3 tbsp custard powder (24g) 5 tbsp self-raising flour (40g) ½ tsp vanilla essence I swapped three of my ingredients to healthier alternatives  Sugar - 1 tbsp ½ spoon sugar Butter  - light olive spread custard powder - reduced sugar custard powder METHOD Preheat oven 160ºc / 140º fan Cream together the butter and sugar Beat in the egg and vanilla essence Stir in the custard powder and flour until everything is well combined Spoon teaspoons of the mixture onto a lined baking tray, making sure you leave room between each as they will spread, press down each cookie lightly with the back of a fork or spoon...

No Bake - Nutty Nibble Chocolate Covered Irresistible Fruit Slices

To make these scrumptious Nutty Nibble Chocolate Covered Irresistible Fruit Slices all you need is a food processor, 3 ingredients and 30 minutes! VEGAN AND PALEO - FRIENDLY INGREDIENTS 1 cup dried dates packed, soaked for 15 minutes and then drained 1 ½ cups of nuts - I used a mixture of walnuts, pecans, hazelnuts, almonds and cashews 1 bar of chocolate of choice - I used a white organic bar  (Vegan & paleo friendly dependant on chocolate you use) METHOD Line an 8 x 8 baking tray/dish with some grease proof paper and place to one side In your food processor add the drained dates and nuts. Blitz/blend until the dates and nuts have broken down, but you can still see small pieces of nut. Healthy Flourless 4 Ingredient Banana Bread Muffins

Just 4 ingredients to make these healthy muffins, they're moist, oaty and naturally sweetened from the bananas Prep time 5 minutes Cook time 30 minutes Total time 35 minutes INGREDIENTS 3 medium ripe bananas 2 cups of oats 2 eggs 1 tsp bicarbonate of soda ¼ cup honey (optional) METHOD Preheat oven 180ºc / 160º fan Lightly grease a muffin tray (you may need more than one) Add all the ingredients to a food processor and blend until smooth and all the ingredients are combined Pour your mixture evenly into your muffin tray (s) Place in the oven on the middle shelf and bake for approx 30-35 minutes, checking after 20 minutes. To check if your muffins are baked, insert a skewer or toothpick into the centre of a muffin, if it comes out clean muffins are baked, if not continue to bake Let your muffins cool for at least 10-15 minutes before removing from the muffin tray, then transfer them to a cooling rack

Homemade Cheese & Garlic Bread and Cherry Bakewell Mini Breads

Just two basic ingredients to make the bread! Preparation just 5 minutes - baking time approx 15 minutes! YEAST FREE - EGG FREE - SUGAR FREE  Cheese and Garlic Cherry Bakewell INGREDIENTS  FOR THE DOUGH: ½ cup self-raising flour 3 tbsp milk ½ tsp baking powder (optional) FOR THE FILLING Cheese and Garlic 30g grated cheese 1-2 cloves of garlic crushed (to taste) Cherry Bakewell 1 tsp almond extract 4-6 glacier cherries chopped 1 tsp chopped almonds (optional) METHOD Preheat oven 180ºc / 160º fan Mix all the ingredients together to form a dough, if your dough is sticky add a little more flour, if it's to dry add a little more milk Shape your dough to your choice Place on a lined or non stick baking tray and bake in the oven on the middle shelf for approx 12-15 minutes or until golden brown

Vegetarian Cauliflower, Hulloumi & Pea Curry

This is an easy recipe to follow, ready in less than an hour and is cheap to prepare! This vegetarian curry is made with pan-fried hulloumi cheese and tasty vegetables. Serves 4 people if having rice and side Serves 2 if just having the curry INGREDIENTS 225g pack Hulloumi Light cheese, cut into cubes 500g frozen or fresh cauliflower florets, cooked your preferred way (i used the microwave) 2 onions, chopped chunky 2 cloves of garlic, crushed or finely sliced 2 heaped tbsp tikka paste 500g carton of passata 200g frozen peas METHOD Cook your cauliflower your preferred way Grab yourself a large non stick frying pan or saucepan and heat a small amount of oil, add the hulloumi chunks and gently fry until they take on a crispy brown colour. Healthy 10 Minute No Bake Granola

This stove top Granola is so incredibly easy, takes less than 10 minutes to make and is nutritiously delicious. Enjoy it for breakfast with some yogurt or just as snack!  INGREDIENTS 1 cup oats ½ cup chopped almonds ½ cup chopped pecans 1 tbsp pumpkin seeds 1 tbsp sunflower seeds ¼ cup dried cranberries ¼ cup sultanas or chopped dried apricots 2 tbsp melted coconut oil  3 tbsp clear honey INSTRUCTIONS In a medium frying pan over a medium heat, toast the oats, almonds, pecans, pumpkin seeds and sunflower seeds for 3-5 minutes, stirring regularly until the oats start to go golden and the nuts and seeds are fragrant but not burnt. Add the coconut oil to the mixture and mix well coating the oats by pressing down using the back of your spoon, so that the oats absorb the oil. Cherry Bakewell Oat Biscuits

Approx 40 calories per biscuit Makes 9 biscuits INGREDIENTS  50g oats  ½ tsp baking powder 1 tsp almond extract 4 glacier cherries 1 small/medium egg METHOD  Preheat oven 190ºc / 170º fan Place all your ingredients into a small food processor and blend until all the ingredients are combined, but be careful not to turn mixture into a paste as you still want texture with your oats. If you find your mixture is very wet just add a few more oats.  Spoon walnut size balls of dough onto a lined baking tray and then flatten slightly with the back of a spoon (you should get 9 biscuits) Place in the oven on the middle shelf and bake for about 12-15 minutes or until biscuits start to go a golden brown Once baked leave on tray to cool for a couple of minutes, then remove and place on a wire cooling rack to finish cooling.

Carrot and Ginger Flourless Oat Slice

No added sugar - Fat free Makes 4 slices Approx 75 calories per slice INGREDIENTS ½ cup oats 1 small/medium egg 1 tsp ground ginger 1 tbsp Whitworths Fiery Crystallised Ginger (chopped) ¼ cup of grated carrot METHOD Preheat oven 200ºc / 180º fan and grease a small oven proof dish Put all the ingredients into a mixing bowl and mix well until all is combined, mixture will be sticky Scoop mixture into your baking dish Place in oven on middle shelf and bake for approx 20 minutes or until edges start to go a golden brown Leave in baking dish once baked for approx 10 minutes, then carefully turn out onto a wire rack to cool  Once cool, slice into four

These muffins have to be the easiest to make and t hey only requiring 3 basic ingredients! Ready to eat within approx 20-25 minutes. Makes 4 muffins INGREDIENTS 1 cup of self-raising flour 1 cup of low fat grated cheese 3/4 cup of skimmed milk  ½ tsp baking powder (optional) METHOD   Preheat your oven to 160c / 180 fan / 350f Grease your muffin tray using some Frylight Sieve your flour into a mixing bowl Then add your grated cheese, followed by the milk and mix well until all the ingredients are combined Scoop your mixture into your prepared muffin tray and bake in the oven on the middle shelf for approx 20-25 minutes, checking half way through, if your find your muffins are starting to brown on top quicker than they're baking just cover loosely with some tin foil Once baked turn out onto a cooling rack Best eaten while still warm with a lightly spreading of butter or some tasty sandwich pickle/chutney, even a spr...

4 Ingredient Yeast Free Low Fat Savoury Eatlean High Protein Smoked Cheese & Marmite Loaf

INGREDIENTS 2 cups self-raising flour (I used 1 cup wholemeal & 1 cup white) 2 cups grated Eatlean High Protein Smoked Cheese or your own choice 1 1/4 cups of skimmed milk or your choice 1 tbsp Marmite METHOD Preheat your oven to 160c / 180 fan / 350f Lightly grease a small loaf and place to one side In a large mixing bowl, sieve your flour, add your cheese, Marmite and milk and mix until all your mixture is well combined Allow mixture to sit for two minutes Pour mixture into your loaf tin Place in the oven on the middle shelf and bake for approx 25-30 minutes, or until lightly brown in colour and cooked through the middle Remove from the oven and leave in tin for approx 5 minutes, then turn out onto a cooling rack  Cool completely before storing in an air-tight container

This soda bread has to be simplest bread to make, needing just 4 basic ingredients, you can have a super tasty fresh loaf of bread in under an hour! Prep time - approx 15 minutes Baking time - approx 30 minutes Serves - 6 INGREDIENTS 170g self-raising wholemeal flour 170g plain white flour ½ tsp bicarbonate of soda 290ml/½ pint buttermilk METHOD 1. Preheat your oven 200ºc / 180ºfan / gas 6 2. Sieve the flours and bicarbonate of soda into a large mixing bowl and stir 3. Make a well in the centre of the flour and pur in your buttermilk, try and mix as quickly as you can using a large fork to form a soft dough. Deliciously light and tasty Guilt free, yet satisfyingly indulgent Low Calorie - Fat Free - Sugar Free This recipe makes approx 10 biscuits You will need a small food processor or something similar  INGREDIENTS  40g oats 30g Protein powder (your choice of flavour, I used strawberry shortcake) 1 egg, medium 1/2 teaspoon baking powder METHOD 1. Strawberries & Cream Protein Loaf Cake with White Chocolate Chunks & Sultanas

Sweet Potato and Lentil Curry Soup - just 5 basic ingredients!

Makes 6 generous portions approx 75 calories per portion INGREDIENTS 2 tbsp/30g orange split lentils Medium (approx 300g) sweet potato  300ml vegetable stock  200g onion 1 tbsp curry powder YOU WILL NEED A SOUP MAKER (you could possibly make on the hob, but I haven't tried it myself) METHOD 1. Put the lentils, curry powder into your soup maker 2. Peel and roughly chop your sweet potato and onion, then tip into your soup maker 3. Make up your stock and pour into your soup maker and give everything a quick stir. (I usually top my stock up in soup maker to fill line) 4. Turn on your soup maker, set to smooth, press start and sit back while the soup maker does the rest 5. Serve and enjoy 

High Fibre Healthy Chewy Date and Banana Loaf - sugar free - fat free - egg free - dairy free

This recipe is so easy to follow and quick to prepare, the hardest part is waiting for the loaf to bake! This loaf is sugar, fat and egg free, naturally sweetened by the banana, dates and Ryvita. INGREDIENTS  4 Sweet Ryvita Crunch 1 medium ripe banana 1 mug of dried dates cut in half 1 tsp baking powder 1 mug of self raising flour 1 mug of wholemeal self raising flour 1 mug of Alpro coconut milk (or any milk of your choice) METHOD  1. Preheat your oven to 180c/fan 160c/gas 4 and line a 450g loaf tin with non-stick baking paper 2. Break the Ryvita up and place in your mixing bowl 3. Using mini food processor, blitz your banana. This Banana Bread is light, fluffy with a rich banana flavour, and has the perfect texture. No mixer or scales needed, this really is probably the easiest banana bread you will ever make. Prep time 10 minutes! INGREDIENTS  2-3 medium ripe banana's 1 egg 1 tsp Baking powder 1 ½  cups of self raising flour (optional) squeeze of honey METHOD  Preheat oven 180°C / 160°C fan  Grease and line a loaf tin 1. What can be easier than baking with only 2 ingredients?  100% healthy 100% tasty INGREDIENTS 1 can of mixed fruit in natural juice Self- raising flour 1 mug  METHOD Pre heat oven 180c  grease a muffin tin/tins using fry-light spray 1. drain the juice from the can into the mug and top up with water, tip liquid into mixing bowl 2. fill mug with fruit and tip into mixing bowl (any left over fruit, you can eat) 3. measure out using the same mug two mug fulls of self raising flour and sieve into mixing bowl  4. mix well until combined  5. spoon mixture into muffin tin and place in oven on middle shelf 6. bake until golden brown or until an inserted cocktail stick comes out clean 7. Healthy Naked Bite-size Weetabix Chewy Chocolate Chunks - no added sugar - no added fat

Ingredients 1 cup sultanas 2 TBSP of natural crunchy peanut butter 2-3 TBSP desiccated coconut  4 weetabix 2 TBSP cocoa powder 2 TBSP honey  Little water if needed to make more runny Method Put all the ingredients in a blender and blend until smooth like fudge Roll onto extra coconut (optional) Line a tray with baking paper Press the mix into the tray and top with some melted chocolate (optional) Leave to set in the fridge As you can see in the photo, I've cut mine into bite-size pieces, but you can cut into slices, whichever you prefer
