INGREDIENTS
50g oats
1 tbsp wholemeal flour (level)
½ tsp baking powder
1 egg
¼ tsp mixed spice
½ tsp cinnamon
15g mini fudge pieces
30g dried cranberries
METHOD
Preheat oven 200ºc / 180º fan and line a baking tray
Put all your ingredients into a mixing bowl and mix well until all the ingredients are well combined, the mixture will be quite wet/sticky
Scoop half your mixture onto one side of your baking tray and shape into a square (about 1cm thickness) and repeat again with remaining mixture on other side of baking tray
Place your baking tray in the oven on the middle shelf and bake for approx 20 minutes or until golden brown
Once baked leave on the baking tray to cool, then carefully slice each bake in half
TIP
If you prefer a chewy firmer bake, then once your bake is complete and your oven is off, leave the bake in the oven to cool along with the oven, this will make your bake a lot firmer as it will continue to dry out. The same as you would do when making meringues
