Pastry Free Quiche - Who Let The Dogs Out!

INGREDIENTS  1 wholemeal wrap 1 medium onion, sliced finely Can of hot dogs Jalapeno's (optional) 2 eggs 2 tbsp skimmed milk 50g grated low fat cheese METHOD 1. Preheat oven to 180ºc / 160ºfan 2. Place your wrap into a round cake tin with the wrap coming up sides of the tin 3. Fry onions & jalapenos (if using) until soft 4. Slice each hot dog into 4 and place in base of quiche 5. Spoon your onions and jalapeno's over the hot dogs 6.Whisk your eggs and milk together, pour over the quiche 7. Sprinkle your grated cheese over the top of the quiche 8. Place quiche in oven on the middle shelf for approx 30 minutes, or until quiche is cooked

3 ingredient yeast free low fat cheese muffins!

These muffins have to be the easiest to make and t hey only requiring 3 basic ingredients! Ready to eat within approx 20-25 minutes. Makes 4 muffins INGREDIENTS 1 cup of self-raising flour 1 cup of low fat grated cheese 3/4 cup of skimmed milk  ½ tsp baking powder (optional) METHOD   Preheat your oven to 160c / 180 fan / 350f Grease your muffin tray using some Frylight Sieve your flour into a mixing bowl Then add your grated cheese, followed by the milk and mix well until all the ingredients are combined Scoop your mixture into your prepared muffin tray and bake in the oven on the middle shelf for approx 20-25 minutes, checking half way through, if your find your muffins are starting to brown on top quicker than they're baking just cover loosely with some tin foil Once baked turn out onto a cooling rack Best eaten while still warm with a lightly spreading of butter or some tasty sandwich pickle/chutney, even a spr...

Sweet Potato and Lentil Curry Soup - just 5 basic ingredients!

Makes 6 generous portions approx 75 calories per portion INGREDIENTS 2 tbsp/30g orange split lentils Medium (approx 300g) sweet potato  300ml vegetable stock  200g onion 1 tbsp curry powder YOU WILL NEED A SOUP MAKER (you could possibly make on the hob, but I haven't tried it myself) METHOD 1. Put the lentils, curry powder into your soup maker 2. Peel and roughly chop your sweet potato and onion, then tip into your soup maker 3. Make up your stock and pour into your soup maker and give everything a quick stir. (I usually top my stock up in soup maker to fill line) 4. Turn on your soup maker, set to smooth, press start and sit back while the soup maker does the rest 5. Serve and enjoy 

Simple 1 pan 5 ingredient Healthy Carb Free Vegetable Biryani, meat free, fat free, low calorie

Serves 3  Approx 146 calories per portion Cook time - 20 minutes Less than £1.00 per portion INGREDIENTS 300g grated carrots 200g diced onion 150g peas 300g cauliflower rice 1 heaped tbsp hot curry powder METHOD 1. Dry fry onion until soft 2. Add curry powder to onion along with two tbsp of cold water and mix well, simmer for a few minutes 3. Add peas, mix well, simmer for a few minutes 4. Repeat stage 3 with the carrots 5. Add cauliflower rice, mix well, place lid on frying pan/wok and on a low/medium heat leave for a bout 15 minutes, or until the vegetables are cooked to your liking. 6. Serve and enjoy Stores well in refrigerator for a good three days, and can be reheated in microwave. Doesn't seem to freeze well, so I wouldn't recommend it. WEEKLY ROUND UP After spending a busy week modifying some of my recipes so they become a healthier  was not an easy task, but here in the Simply Scrumptious kitchen I managed it, and without any mishaps!  Some are sugar-free, some are fat-free, vegetarian, flour-free, you name it I've modified it and made it. Below is a round up in photos of this weeks bakes. After a busy week in the kitchen, I was all baked out! Undecided what to have for dinner and I wanted something quick and easy. I put together a favourite dish of mine, it's full of colour, it's wholesome, healthy and the best part is it only requires one pan. The dish is my version of a Vegetable Biryani, it's tasty, inexpensive and packed with vitamins.
