Healthy Dairy Free Date and Walnut Muffins

NO ADDED SUGAR - FAT FREE - EGG FREE  YOU WILL NEED -  A food blender/processor  Set of measuring cups and spoons INGREDIENTS 2 cups of dried dates, halved 1 cup of hot water 1 cup of self-raising wholemeal flour 1 cup of self-raising flour 1 tsp baking powder ½ cup date and walnut mix ¾ cup of dairy free milk METHOD 1. Preheat oven to 190ºc / 170º fan 2. Soak the 2 cups of halved dates in the hot water for approx 30 minutes 3. Place the soaked dates and the water into a food blender and blend until you get a smooth paste consistency 4. In a mixing bowl pour in the date paste and your dairy free milk and mix well 5. Add the rest of your ingredients and mix well 6. Pour you mixture evenly into your muffin tray 7. Place in the oven on the middle shelf and bake for approx 25-30 minutes

Dairy Free Chunky Date and Walnut Mini Loaves

Scrumptiously tasty, with only 5 ingredients required and no scales needed; making healthy mini loaves has never been easier! There're high in fibre, dairy free, egg free, fat free and have no added sugar. All the sweetness comes from the dates. Deliciously scrumptious, your find it hard to resist a second! These muffins are sugar free, egg free and naturally sweetened from the dates. Makes 8 good size muffins YOU WILL NEED A FOOD BLENDER FOR THIS RECIPE INGREDIENTS 2 cups of dried dates 1 cup of hot milk (your choice of milk) 1/4 cup of low fat greek yogurt 2 cups of self-raising wholemeal flour 1 tsp baking powder 1/2 tsp baking soda 1/2 cup of milk 1/2 cup chopped walnuts 5 chopped dried dates METHOD 1. 3 ingredient Slow Cooker Healthy Fruit Cake

This is a simple recipe with basic ingredients that will give you a scrumptiously moist fruit cake, with plump sweet juicy sultanas WHAT YOU WILL NEED Slow cooker Mixing bowl Grease poof paper to line your slow cooker bowl A clean tea towel  A standard size drinking mug INGREDIENTS 2 mugs self raising flour 1 mug of sultanas 1 1/2 mugs of stewed black tea 1 tsp baking powder (optional) METHOD 1. Place your sultanas into your mixing bowl and pour in just 1 mug of your stewed black tea,(keep the other half one side as you may need it later) let soak for a approx 2-3 hours 2. Low Calorie Sugar Free Fruity Flapjack

INGREDIENTS 200g porridge oats 300ml water (can use apple or orange juice) 2 tbsp honey 60g dried dates (or any dried fruit) 60g sultanas (or raisins, currants) 30g walnuts (or any nuts) METHOD Preheat oven to 180 Celsius Put the water/juice and honey in a pan and heat gently until it starts to simmer Add the oats and mix well until completely combined, there should be no liquid left, it should be absorbed. Take of the heat and mix in the fruit and nuts Mix well then tip into a greased lined baking tray. Press down the mixture so its all compacted.  Bake in the oven on middle shelf for approx 40 minutes or until golden brown and has a crispy top Remove from the oven, cut into squares whilst the flapjack is still warm, but leave in the tray to cool Once cooled turn out and enjoy the taste and chewiness without feeling guilty 

Tasty Date & Walnut Cake, packed full of fibre with a malty taste - Sugar-free Fat-free

This is sure to become a favourite treat without the guilt of a normal slice of cake. Its packed full flavour, has a scrumptious malty taste and the sweetness comes from the tasty dates. PREP TIME - 8 minutes COOK TIME - 45 minutes TOTAL TIME - 53 minutes INGREDIENTS 4 weetabix, crushed 1 cup of dried dates, chopped 1/4 cup chopped walnuts 1 tsp bicarbonate of soda 1 cup of boiling water 1 cup of wholemeal self-raising flour 2 eggs METHOD 1. Preheat oven to 180c and grease either a loaf tin or a square tin (approx  18 x 18 cm) 2. In a large bowl, place the weetabix, dates and bicarbonate of soda. Pour in the boiling water, stir well and let sit until mixture is relatively cool. 3. Add in the flour and eggs beating well until all the mixture is combined. 4. Pour into your tin and bake on middle shelf 40-50 minutes or until cooked through.

High Fibre Date & Walnut Sugar Free Cake

Quick easy cake to make. Delicious straight from the oven with a freshly brewed coffee or tea. INGREDIENTS 50g butter (I used low fat olive spread) 4 weetabix crushed 1 cup of dates chopped 1 tsp bicarbonate of soda 1 cup of boiling water 1 egg lightly beaten 1 cup of self-raising flour 1/2 cup of walnuts chopped METHOD 1. Grease and line a 18 x 18 cm tin 2. Put the butter, weetabix, dates, bicarbonate of soda and water into a mixing bowl 3. Mix well until all is combine and leave to cool 4. Stir in the eggs, flour and walnuts. Pour into your prepared tin.  5. Cook at 180c for approx 25-30 minutes, or until cooked when tested. 6. Remove from tin once cooler enough to handle and cut into slices. 

Easy Luxurious Cappuccino Coffee Tray Bake Sponge Cake Recipe

INGREDIENTS 4oz very soft butter, plus a little more for the tray 4oz castor sugar 4oz  self-raising flour 1 tsp baking powder 2 large eggs 2 level tsp instant coffee, dissolved on 1/2 tbsp boiling water 9 walnut halves to decorate (OPTIONAL) FOR THE COFFEE ICING 3oz soft butter 6oz icing sugar 2 level tsp instant coffee, dissolved in 1/2 tbsp of boiling water METHOD Preheat oven to 180C / 160 FAN Butter and line your tray Measure all the cake ingredients, except for the coffee, into a large mixing bowl and beat together until smooth. Stir in the dissolved coffee until thoroughly mixed. Pour mixture into your prepared tray Bake in oven on middle shelf for approx 25-30 minutes, until golden brown To make the icing, mix the butter and icing sugar together until smooth. Carefully beat in the dissolved coffee. Once cake has cooled, ice the top.

Wholesome, Healthy, Easy, Nutritious, 3 Ingredient Date and Walnut Slice

3 Ingredient Date & Walnut Slice This recipe is easy, quick, takes no time at all and requires no scales. Just 3 healthy ingredients, a food processor and a baking tray.  INGREDIENTS 16 Dates 1 cup of porridge oats 1/4 cup of chopped walnuts 2 tbsp hot water METHOD Preheat the oven to 375F/190C/170 fan In a food processor add the dates and 2 tbsp of hot water and pulse until smooth.  Pulse in oats and walnuts until a sticky dough forms. Tip dough onto a baking tray lined with grease proof paper and shape into a long rectangle/square and press down firmly. Bake for approx 15 minutes. Leave to cool slightly, then slice and carefully transfer to a wire rack to completely cool.

Healthy, Chewy Nutritious Prune and Walnut Slice

Prune & Walnut Slice Ingredients  16 Prunes 2 Tbsp hot water  1 cup of rolled oats  1/4 cup of chopped walnuts Method Preheat your oven to 170 fan/190c  Using a food processor pulse the prunes and hot water until smooth Pulse in the oats and walnuts until a sticky consistency forms Scoop onto a lined baking tray or non stick tray and shape into a large square/rectangle Place in the oven and bake for approx 15 minutes After removing from the oven leave to cool for 10 minutes then cut into your required size, leaving then to fully cool.
