NO ADDED FAT - NO ADDED SUGAR This loaf cake is the perfect afternoon treat It's so versatile, just slice and eat, or if you feel like indulging spread thickly with butter. You could even toast it and have it for breakfast with some honey, jam or better still a little chocolate spread. The perfect way to fuel your morning! Healthy Cheese and Marmite Crumpet Loaf

For the Marmite lover! Either LOVE IT or HATE IT! INGREDIENTS 20g low fat butter 20g plain flour 200ml semi skimmed milk 200g low fat cheese, grated 1 tsp Marmite, plus extra for spreading 6 crumpets 100g low fat mozzarella, 6 slices and the rest grated METHOD Preheat oven 220ºc / 200º fan Line the bottom of a loaf tin with a strip of grease proof paper Heat the butter in a pan over a medium heat until it has melted, then add in the flour and stir to make a paste. Gradually add the milk, continually stirring until its all combined. Simmer gently until you get a think white sauce. Add in your grated cheese and 1 tsp of Marmite. Keep stirring until the cheese has melted, then remove from the heat. Simply Scrumptious 3 Ingredient Healthy Fruit and Seed Mini Loaf

NO ADDED FAT - EGG FREE - SUGAR FREE INGREDIENTS Makes 4 mini loaves Each mini loaf is less than 150 calories each  INGREDIENTS 125g self-raising flour 50g fruit and seed mix 120ml skimmed milk or your choice You could if you wanted to, use half wholemeal self-raising and half white self-raising flour if you like the nutty wholegrain flavour that comes from wholemeal.  NOTE - You do get a lighter and better rise using just white flour as wholemeal is heavier.   METHOD Preheat oven 200ºc / 180ºfan Grease a mini loaf tray or muffin tray Put the flour and the fruit and seed mix into a bowl and mix Make a well in the middle of the dry ingredients and pour the milk in, mix well until everything is combined, if your mixture appears a little dry just add a little more milk Spoon your dough evenly into your mini loaf tray. INGREDIENTS 60g oats  1 medium egg 1 tsp baking powder 1 tsp ground ginger 2 tbsp low fat greek yogurt 20g Whitworths Fiery Ginger METHOD   Preheat oven to 180c/350f (gas 4) Place oats & ginger in a mini food processor/blender and blitz till fine  Add the oats, ginger, baking powder, ground ginger to a mixing bowl and mix to combine In a separate bowl whisk the egg and yogurt, then add to the dry mixture and mix well Grease 3 comports of a mini loaf tray using spray oil Divide the mixture equally in 3 compartments of the mini loaf tray Bake in the oven on middle shelf for approx 35/40 minutes, until golden brown, a skewer/cocktail stick should come out clean Allow to cool for about 10 minutes in the tray, then carefully remove and place on a cooling rack

Strawberries & Cream Protein Loaf Cake with White Chocolate Chunks & Sultanas

INGREDIENTS  2 mugs self raising flour 1 tsp baking powder (optional, I find it helps) 1 egg, beaten  1 mug of strawberries & cream protein shake made up with water white chocolate chunks (you choose the amount)  handful of sultanas (optional) YOU MUST USE THE SAME MUG FOR ALL MEASUREMENTS REQUIRED, BIGGER THE MUG, BIGGER THE LOAF METHOD 1. Preheat your oven to 200c electric / 180c fan / gas 6 2. Line your loaf tin with grease proof paper 3. Sieve your flour and baking powder into a large mixing bowl, add your chocolate and sultanas if using and mix well 4. Add your protein shake, the egg and mix all the ingredients together until everything is evenly combined 5. Date and Shake Cake - no added sugar - no added fat - just 4 simple ingredients

INGREDIENTS 1 cup milkshake (your choice on flavour, I used banana) 1 cup of chopped dates (approx) 2 cups self-raising flour 1tsp baking powder YOU MUST USE THE SAME CUP/MUG FOR ALL YOUR MEASUREMENTS, THE BIGGER THE CUP/MUG THE BIGGER THE CAKE METHOD 1. Preheat your oven to 180 fan and line a loaf tin with some grease paper 2. Soak the dates in the milkshake for approx 15 minutes 3. Sieve the flour and baking powder into the wet mixture and thoroughly stir, if you find your mixture is quite stiff/dry just add a little more milkshake, but only a little at a time 4. Pour mixture into your prepared loaf tin and bake on middle shelf for approx 30/40 minutes or until a toothpick comes out clean, if the top of your cake is starting to brown just cover with some foil loosely

High Fibre Healthy Chewy Date and Banana Loaf - sugar free - fat free - egg free - dairy free

This recipe is so easy to follow and quick to prepare, the hardest part is waiting for the loaf to bake! This loaf is sugar, fat and egg free, naturally sweetened by the banana, dates and Ryvita. INGREDIENTS  4 Sweet Ryvita Crunch 1 medium ripe banana 1 mug of dried dates cut in half 1 tsp baking powder 1 mug of self raising flour 1 mug of wholemeal self raising flour 1 mug of Alpro coconut milk (or any milk of your choice) METHOD  1. Preheat your oven to 180c/fan 160c/gas 4 and line a 450g loaf tin with non-stick baking paper 2. Break the Ryvita up and place in your mixing bowl 3. Using mini food processor, blitz your banana. Just 6 basic ingredients are needed to make this perfect teatime treat. Its moreish and with no added fat or added sugar, all the sweetness comes from the juicy sultana's. This cake is the perfect accompaniment with a hot cup of tea. INGREDIENTS 1 mug of boiling water 3/4 mug sultana's 150g finely grated carrot 1tsp mixed spice 1tsp ground cinnamon 1tsp baking powder 2 mugs self-raising flour METHOD Preheat oven 180 fan Grease & line a loaf tin In a mixing bowl place the sultana's and boiling water, leave to soak until water has cooled Once cooled, stir in the carrot, then sieve in the flour, baking powder, mixed spice & cinnamon. Mix well until all the ingredients are combined. If you find the mixture to dry just add a little more water.  Scoop into your loaf tin and place in the oven on the middle shelf and bake for approx 30 minutes, or until cooked. A lovely moist fruity mixed spice cake, perfect with a freshly brewed cup of tea INGREDIENTS 1 cup of sultanas 1 cup of boiling water 2 cups of self-raising flour 1tsp baking powder (optional) 1tsp cinnamon 1tsp mixed spice  The size cake you make depends on the size mug/cup you use (the bigger the mug the bigger the cake) METHOD Pre-heat oven to 160 fan / 180 electric  Place the sultanas in a mixing bowl, adding the boiling water. Leave to soak for a good 20-30 minutes the longer the better, if you can over night will give you much juicier fruit in the cake. A healthy scrumptious old fashioned Gluten-free, sugar-free, fat-free Bread Pudding just like you had at grandma’s.

Bread Pudding Ingredients 500g gluten free wholemeal bread 500g sultanas 1 1/2 tbsp mixed spice 600ml semi skimmed milk 2 large eggs beaten 1-2 tbsp of dark brown sugar (optional) Method Tear the bread into a large mixing bowl and add the sultanas and mixed spice. Pour  in the milk, then scrunch through your fingers to mix everything well and completely break up the bread. Add the eggs and sugar if using, stir well and set aside for approx 15 minutes. Heat oven to 180/160c fan/gas 4. Butter and line the base of a 20cm non-stick cake tin. Tip pudding  mixture into the tin. Bake for approx 1 1/2 hours until firm and golden, if pudding starts to brown early on cove with foil. Turn out of the tin onto a wire rack and leave to cool, or can be eaten hot from the oven.

Ingredients 3 medium bananas 2 cups of old-fashioned rolled oats 2 large eggs 1/4 cup of maple syrup (less if using honey) Teaspoon baking soda Method Preheat oven to 180/160 fan / 350f  Lightly grease 9x5-inch loaf pan or mini loaf pan or a pan of your choice, with non-stick cooking spray and set aside. Add all the ingredients to a blender and blend until smooth and well combined. Pour mixture into prepared pan. Bake for 30-35 minutes or until a skewer inserted comes out clean. Let loaves/muffins cool completely . Store in an airtight container in the refrigerator.
