No Bake - Nutty Nibble Chocolate Covered Irresistible Fruit Slices

To make these scrumptious Nutty Nibble Chocolate Covered Irresistible Fruit Slices all you need is a food processor, 3 ingredients and 30 minutes! VEGAN AND PALEO - FRIENDLY INGREDIENTS 1 cup dried dates packed, soaked for 15 minutes and then drained 1 ½ cups of nuts - I used a mixture of walnuts, pecans, hazelnuts, almonds and cashews 1 bar of chocolate of choice - I used a white organic bar  (Vegan & paleo friendly dependant on chocolate you use) METHOD Line an 8 x 8 baking tray/dish with some grease proof paper and place to one side In your food processor add the drained dates and nuts. Blitz/blend until the dates and nuts have broken down, but you can still see small pieces of nut. Healthy Wholemeal Peanut Butter Cookies - crunchy but chewy!

Crunchy, chewy nutty delights! Cook time 20 minutes 12 servings INGREDIENTS 30g light olive spread, softened 3 tbsp maple syrup or honey 2 medium eggs 75g crunchy peanut butter 50g porridge oats 130g wholemeal plain flour METHOD 1. Preheat oven to 200c / 180c fan / gas 6  2. Line a baking tray 3. Beat in the olive spread then add in the syrup/honey and eggs and mix. Then mix in the peanut butter, then oats and lastly the flour. You may need to add a little more flour.  4. Divide the mixture into 12 large walnut size balls onto the baking tray, making sure you leave enough between each one, flatten each ball with a fork or the back of a spoon. 5. Bake in the oven on middle shelf for approx 15-18 minutes until golden brown 6. Cool on the baking tray for five minutes then place on a cooling rack to cool completely 

Healthy Peanut Butter High Protein Sugar Free Oat Cookies - Ready to eat in less than 30 minutes!

Simply Scrumptious Nutty Granola - Dairy Free

This granola is simple, but packed full of nutty flavours and sweetness from the juicy cranberries and sultanas. Ideal for breakfast or as topping on yogurt INGREDIENTS 400g oats 60g sunflower seed and/or pumpkin seed (I did 30g of each) 95g mixed nut selection roughly chopped 50g Dairy Free spread 3 tbsp of clear honey 45g cranberries 30g sultanas  METHOD Preheat oven 180c, 160c fan, Gas 4 1. In a mixing bowl put the oats, seeds nuts, cranberries and sultanas and mix well 2. Melt the dairy free spread and honey using the microwave, then stir into your dry mixture 3. Tip your granola onto a non stick baking tray and place in the oven on the middle shelf for approx 15 minutes, then give a quick stir, return to the oven for a further 10-15 minutes 4. Leave granola in the baking tray to cool completely 5. The granola can be stored in an airtight container for approx 1 week

This banana and peanut butter flavour bread, has a lovely rich banana flavour with a subtleness of the peanut butter, and an ever so soft texture.
