These biscuits are light, fluffy and take on a lovely orange colour from the sweet potato.
All the sweetness in these biscuits is from the potato and cinnamon, if anymore sugar was added they would be far to sweet.
INGREDIENTS
150g self raising flour
150g sweet potato
70g butter, melted
Cinnamon - as much as you fancy
METHOD
Preheat oven 190ºc / 170º fan
Cook your sweet potato your preferred way. I cooked mine in the microwave for approx 6-10 minutes
Once the potato is cooked and your able to handle it, scoop out the insides onto a bowl and mash it up so it is nice and smooth
Add the melted butter and give it a quick stir
Then add the self raising flour and cinnamon
Mix well until everything is combined and you have a dough
Flour a clean work surface and roll out your dough, using a cutter of choice cut out your biscuits and place them on your prepared baking tray
Bake in the oven for approx 12-15 minutes
