Vegetarian Cauliflower, Hulloumi & Pea Curry

This is an easy recipe to follow, ready in less than an hour and is cheap to prepare! This vegetarian curry is made with pan-fried hulloumi cheese and tasty vegetables. Serves 4 people if having rice and side Serves 2 if just having the curry INGREDIENTS 225g pack Hulloumi Light cheese, cut into cubes 500g frozen or fresh cauliflower florets, cooked your preferred way (i used the microwave) 2 onions, chopped chunky 2 cloves of garlic, crushed or finely sliced 2 heaped tbsp tikka paste 500g carton of passata 200g frozen peas METHOD Cook your cauliflower your preferred way Grab yourself a large non stick frying pan or saucepan and heat a small amount of oil, add the hulloumi chunks and gently fry until they take on a crispy brown colour. This recipe make 3 generous portions Each portion is approx 303 calories All you need is a slow cooker INGREDIENTS 1kg bag of frozen cauliflower, broccoli and baby carrot mix 300g frozen butternut squash 1 tin of green lentils, drained and rinsed 1 jar of bhuna sauce INSTRUCTIONS 1. Place your mixed vegetables, butternut squash, lentils and curry sauce into your slow cooker 2. Put your slow cooker on low and cook for approx 5-6 hours, depending how well done you want your vegetables cooked. Serves 3  Approx 146 calories per portion Cook time - 20 minutes Less than £1.00 per portion INGREDIENTS 300g grated carrots 200g diced onion 150g peas 300g cauliflower rice 1 heaped tbsp hot curry powder METHOD 1. Dry fry onion until soft 2. Add curry powder to onion along with two tbsp of cold water and mix well, simmer for a few minutes 3. Add peas, mix well, simmer for a few minutes 4. INGREDIENTS 1 mug of boiling water 3/4 mug sultana's 150g finely grated carrot 1tsp mixed spice 1tsp ground cinnamon 1tsp baking powder 2 mugs self-raising flour METHOD Preheat oven 180 fan Grease & line a loaf tin In a mixing bowl place the sultana's and boiling water, leave to soak until water has cooled Once cooled, stir in the carrot, then sieve in the flour, baking powder, mixed spice & cinnamon. Crunchy, Chewy Low Sugar Cheerio Marshmallow Breakfast Bars

Marshmallow Bars INGREDIENTS 40g Cheerio's - less than 5% sugar 40g sugar free marshmallows METHOD Melt the marshmallows in a glass bowl in the microwave. This should only take 10-15 seconds! Once melted, give it a quick stir. I'd recommend using a silicone spatula, as it makes the melted marshmallow easier to work with.  Add the Cheerios to the melted marshmallows and stir well. You will need to move quickly, as the marshmallow will stiffen as it cools. If you should need to, return the mix to the microwave for approx 5 seconds at a time, to loosen the mixture up. Tip the Cheerio-marshmallow mix into a rectangular/square dish, and flatten. You may need to use a spoon or knife heated in some hot water for this bit. It makes the mix much easier to spread. Healthy Low Calorie, Low Fat, Carb Free Vegetarian Carrot Biryani - Cheats Way!

Carrot Biryani  Minimal preparation is required for this low calorie, carb free vegetarian biryani, only taking approx 25 minutes. Preparation 10  minutes Cook 15 minutes INGREDIENTS 2 bags of ASDA grated carrot 1 bag of ASDA chopped onion 150g Frozen peas  1 or 2 bags of frozen cauliflower rice, its up to you 1TBSP Hot curry powder Fresh garlic chopped (optional) Fresh chilli chopped (optional) METHOD Heat a little oil in a frying pan, then fry onion until soft. Stir in the curry powder with a splash of water and cook for another couple of minutes. Add the grated carrot stirring well to coat in the curry powder. Tip the cauliflower rice and peas into the pan and stir well, cover and cook over a high heat for approx 5 minutes, or until the vegetables are to your liking.

Healthy Banana & Blueberry Loaf Simple ingredients Small banana & blueberry cake  INGREDIENTS   STANDARD LOAF 4 Bananas  3 eggs  300g ground almonds 100g blueberries 1tsp baking powder  A squeeze of honey SMALL  LOAF 1 1/2 Bananas  1 eggs  100g ground almonds 30g blueberries 1/3tsp baking powder  A squeeze of honey METHOD    In a bowl, mash bananas. Add eggs and a squeeze of honey. Add ground almonds and baking powder - mix well.  Fold in  blueberries.  Pour into a lined baking tin and place in the oven at 170C for one hour.  Leave to cool. Slice and eat.

Christmas Cake the easy way

4 INGREDIENT CHRISTMAS CAKE Ingredients Jar of Mincemeat (400g) 200ml ginger ale or ginger beer 2 eggs 200 g self raising flour Method Measure out your ginger ale/ginger beer, note this needs to be fizzy for the recipe to work. Measure out in a jug and wait for the bubbles to settle so your sure you have the correct amount, then pour into your mixing bowl. Add the mincemeat and mix well. This forms the basis of your sugar, fruit and spices.  Next crack in the eggs and stir in the flour and mix well.  Grease your cake tin and pour the mixture in. Bake at 170c for approx 50 minutes. You may have to cover the cake halfway through to stop the top browning too much. 

Healthy Tea Loaf - Fat free, sugar free & egg free! Only 4 simple ingredients!

What you will need – A mug, any size – the bigger the mug the bigger the cake Loaf tin Grease-proof paper to line the tin Mixing bowl   Ingredients – 2 mugs of  s elf raising flour – either white or wholemeal (  I  do half and half) 1 mug of sultanas 1½ mug s  of stewed black tea   1 TSP of baking powder (optional, but  I  find  that the  cake turns out better with it)   Oven temperature 160 fan/180, middle shelf Method – Place a mug of sultanas into a mixing bowl and pour in 1½ mugs of freshly brewed tea, leave to soak for approx 2-3 hours   Measure out two mugs of flour along with the baking powder (if using) and then mix into the wet mixture. If you find the mixture to o  dry just add a little extra liquid. (It is trial and error)   Place mixture into  a  loaf tin and bake for approx 40-50 minutes or until skewer/knife comes out reasonably clean    Top Tips ...
