Healthy Dairy Free Date and Walnut Muffins

NO ADDED SUGAR - FAT FREE - EGG FREE  YOU WILL NEED -  A food blender/processor  Set of measuring cups and spoons INGREDIENTS 2 cups of dried dates, halved 1 cup of hot water 1 cup of self-raising wholemeal flour 1 cup of self-raising flour 1 tsp baking powder ½ cup date and walnut mix ¾ cup of dairy free milk METHOD 1. Preheat oven to 190ºc / 170º fan 2. Soak the 2 cups of halved dates in the hot water for approx 30 minutes 3. Place the soaked dates and the water into a food blender and blend until you get a smooth paste consistency 4. In a mixing bowl pour in the date paste and your dairy free milk and mix well 5. Add the rest of your ingredients and mix well 6. Pour you mixture evenly into your muffin tray 7. Place in the oven on the middle shelf and bake for approx 25-30 minutes

Fruit and Veggie Cinnamon Muffins

These muffins are deliciously tasty with a subtle kick of cinnamon with every mouthful. They are fat free with no added sugar which make them perfect for snacking on when hunger strikes! They have a lovely chewy outer crust to them and mouthwatering moist tasty centre, which will make hard to resist a second helping! YOU WILL NEED A BLENDER FOR THIS RECIPE INGREDIENTS 75g apple peeled, cored and roughly chopped 50g carrot grated 50g banana 1 egg 1 tsp cinnamon 100g self-raising flour ½ tsp baking powder (optional) METHOD Preheat oven 180ºc / 160ºfan and grease your muffin tray Blitz apple and banana in your food blender/processor to make a puree Grate your carrot In a bowl add the puree and egg, whisk until both are combined Sieve in the dry ingredients, mix well Fold in the grated carrot Pour the mixture evenly into your muffin tray Bake in the oven on the middle shelf for approx  25-30 minutes

3 ingredient yeast free low fat cheese muffins!

These muffins have to be the easiest to make and t hey only requiring 3 basic ingredients! Ready to eat within approx 20-25 minutes. Makes 4 muffins INGREDIENTS 1 cup of self-raising flour 1 cup of low fat grated cheese 3/4 cup of skimmed milk  ½ tsp baking powder (optional) METHOD   Preheat your oven to 160c / 180 fan / 350f Grease your muffin tray using some Frylight Sieve your flour into a mixing bowl Then add your grated cheese, followed by the milk and mix well until all the ingredients are combined Scoop your mixture into your prepared muffin tray and bake in the oven on the middle shelf for approx 20-25 minutes, checking half way through, if your find your muffins are starting to brown on top quicker than they're baking just cover loosely with some tin foil Once baked turn out onto a cooling rack Best eaten while still warm with a lightly spreading of butter or some tasty sandwich pickle/chutney, even a spr...

Dairy and Yeast Free Healthy Spiced Fruit Bread Buns

FAT FREE - EGG FREE - NO ADDED SUGAR - DAIRY FREE - YEAST FREE Just four simple ingredients to make these delicious spiced fruit bread buns! No scales required just a set of measuring cups and spoons! If you don't have measuring cups don't worry, you can use a normal cup or mug as long as you use the same one for all the measurements. The bigger the cup/mug the more buns you make I used a small mug and made 9 buns The recipe does say white self-raising flour, but I tried it with half wholemeal flour and half white self- raising flour. Having made these buns both ways, I found using all white self-raising flour gives you a lighter and better rise to the buns as I found the wholemeal makes the buns heavier and they didn't seem to rise as much. Baked Banana Cinnamon & Sultana Oats - an explosion of scrumptiousness!

The perfect healthy breakfast muffin on a cold winters morning, ideal to eat on the way to work or on the school run. This recipe is so simple it takes no more than 10 minutes to prepare and can be baking while you get ready for your day ahead. These muffins are delicious 10 minutes after coming out of the oven with the warm juicy sultana's and the subtlety of the cinnamon.
