INGREDIENTS
200g porridge oats
250g carrots, coarsely grated
2-3 tsp ground cinnamon (dependent on how much you like cinnamon)
1-2 tbsp honey
2 large eggs beaten
6 walnuts chopped (optional)
METHOD
1. Preheat the oven to 200c/fan 180c/gas 6 and line a baking tray with some grease proof paper
2. Put all the ingredients into a large mixing bowl and mix until everything is well combined
3. Scoop your mixture into your prepared tray and flatten down
4. Place in the oven on the middle shelf and bake for approx 15 minutes, or until a golden brown
5. Leave to cool for about 10 minutes, transfer to a cooling rack to cool completely, then cut into slices
