A Lighter Classic Coffee Sponge Cake decorated with Chocolate Stars

Brighten up your afternoon with a slice of this moist scrumptious indulgent coffee cake. A classic coffee sponge with a chocolate star on each slice, which is an optional extra. This is a lighter/healthier version of the favourite classic coffee cake. Made with half spoon sugar and at a reduced amount. For a sponge cake this recipe has very little sugar! I also opted for a low fat olive spread. Having made the healthier changes it hasn't impacted on the flavour at all, if anything it's enhanced the richness of the coffee flavour, but without making it bitter. This simple yet moreish cake is perfect for when friends or family visit as it takes no time at all to make. 3 ingredient Slow Cooker Healthy Fruit Cake

This is a simple recipe with basic ingredients that will give you a scrumptiously moist fruit cake, with plump sweet juicy sultanas WHAT YOU WILL NEED Slow cooker Mixing bowl Grease poof paper to line your slow cooker bowl A clean tea towel  A standard size drinking mug INGREDIENTS 2 mugs self raising flour 1 mug of sultanas 1 1/2 mugs of stewed black tea 1 tsp baking powder (optional) METHOD 1. Easy Luxurious Cappuccino Coffee Tray Bake Sponge Cake Recipe

INGREDIENTS 4oz very soft butter, plus a little more for the tray 4oz castor sugar 4oz  self-raising flour 1 tsp baking powder 2 large eggs 2 level tsp instant coffee, dissolved on 1/2 tbsp boiling water 9 walnut halves to decorate (OPTIONAL) FOR THE COFFEE ICING 3oz soft butter 6oz icing sugar 2 level tsp instant coffee, dissolved in 1/2 tbsp of boiling water METHOD Preheat oven to 180C / 160 FAN Butter and line your tray Measure all the cake ingredients, except for the coffee, into a large mixing bowl and beat together until smooth. Stir in the dissolved coffee until thoroughly mixed. Pour mixture into your prepared tray Bake in oven on middle shelf for approx 25-30 minutes, until golden brown To make the icing, mix the butter and icing sugar together until smooth. These muffins are so easy to make and take no time at all.
