Flourless Chewy Cherry Bakewell Spongy Oat Cookies

A quick, easy healthier sweet treat any time of day! These cookies are a cross between a sponge cake and a cookie texture READY IN LESS THAN 30 MINUTES! Makes 4 large cookies INGREDIENTS  50g (½ cup) ground oat flour 25g (¼ cup) desiccated coconut ¼ tsp baking powder ¼ baking soda 1 medium egg lightly beaten 40g honey ½ tsp almond extract (not essence) 4 glacier cherries, finely chopped (optional) INSTRUCTIONS Preheat oven 180ºc / 160º fan and line a baking tray In a large mixing bowl combine the ground oat flour, coconut, baking powder and bicarbonate soda Add the the lightly beaten egg, honey, chopped cherries and almond extract into the dry ingredients and mix everything together until all of it is combined. The mixture should be quite stiff, well able to hold itself, but should be a little wet, enough to drop of a spoon. Healthy Flourless 4 Ingredient Banana Bread Muffins

Just 4 ingredients to make these healthy muffins, they're moist, oaty and naturally sweetened from the bananas Prep time 5 minutes Cook time 30 minutes Total time 35 minutes INGREDIENTS 3 medium ripe bananas 2 cups of oats 2 eggs 1 tsp bicarbonate of soda ¼ cup honey (optional) METHOD Preheat oven 180ºc / 160º fan Lightly grease a muffin tray (you may need more than one) Add all the ingredients to a food processor and blend until smooth and all the ingredients are combined Pour your mixture evenly into your muffin tray (s) Place in the oven on the middle shelf and bake for approx 30-35 minutes, checking after 20 minutes. To check if your muffins are baked, insert a skewer or toothpick into the centre of a muffin, if it comes out clean muffins are baked, if not continue to bake Let your muffins cool for at least 10-15 minutes before removing from the muffin tray, then transfer them to a cooling rack

NO ADDED SUGAR - FLOURLESS - FAT FREE INGREDIENTS 1 cup of oats 1 tsp baking powder 1 egg ½ cup fat free greek yogurt with honey  2 tbsp chopped crystallised ginger (I use Whitworths Fiery Ginger) 1 tsp ground ginger ¼ cup of ground oats YOU CAN USE A PLAIN YOGURT, I USE ONE WITH HONEY IN FOR THE ADDED SWEETNESS Preheat oven 160º fan / 180ºc Bake time - 30 minutes Makes 6-7 large cookies METHOD Put the dry ingredients into a large mixing bowl, then add the wet ingredients, mix well until everything is combined Scoop 6-7 spoonfuls of the mixture onto a lined baking tray, you may need more than one tray, making sure you leave enough room between each one as they will spread a little, flatten each cookie down slightly using the back of a spoon Bake in the oven for approx 30 minutes or until a golden brown on edges Carefully remove your cookies onto a wire rack to cool

Cranberry and Fudge Chewy Spiced Oat Bake - Flourless and Healthy

No added sugar Fat free Makes 2 giant cookies APPROX 150 calories per cookie INGREDIENTS 1/2 cup of oats 1 egg 1 tsp ground ginger 1 tbsp Whitworths Fiery Crystallised Ginger (chopped) 1/4 fresh carrot grated METHOD Preheat oven 220c / 180 fan and line a baking tray Put all the ingredients in a mixing bowl and mix well until all the mixture is combined. The mixture will be quite wet/sticky. If it is very wet just add a little more oats. Place half the mixture on baking tray and shape into a giant cookie leaving enough room for the second cookie Place in the oven and bake for approx 20 minutes for a soft cookie Leave on baking tray to cool once removed from the oven, unless you can carefully remove to  a wire rack TIP   If you prefer a chewy firmer cookie, once cookie is baked and oven is turned off, leave cookie in oven to cool

Healthy Peanut Butter and Date Energy Bars. Low Gi, High Protein, Sugar free & just 3 ingredients!

INGREDIENTS  1 cup of oats 18 dried dates chopped in half 2 tbsp boiling water 1 heaped tbsp of Hi-Pro peanut powder METHOD Preheat oven to approx 160/180c 1. Soak dates in the boiling water for approx 15 minutes 2. Put dates and water into blender and pulse until dates are broken down 3. Add peanut powder to dates, pulse until mixed 4. Add porridge oats to the mixture, blend until all is combined 5. Tip mixture onto some grease proof paper, place another piece on top of mixture and roll out to desired thickness, cut into slices, place on a lined baking tray 6. Place in oven on middle shelf and bake for about 15 minutes, or until cooked.  7. Once cooked carefully put onto a wire rack to cool, slices should be soft and chewy once cooled.
