These Ginger biscuits have it all, they're full on flavour, chewy and big on crunch, with that added kick from the fiery ginger. Flourless Chewy Cherry Bakewell Spongy Oat Cookies

A quick, easy healthier sweet treat any time of day! These cookies are a cross between a sponge cake and a cookie texture READY IN LESS THAN 30 MINUTES! Makes 4 large cookies INGREDIENTS  50g (½ cup) ground oat flour 25g (¼ cup) desiccated coconut ¼ tsp baking powder ¼ baking soda 1 medium egg lightly beaten 40g honey ½ tsp almond extract (not essence) 4 glacier cherries, finely chopped (optional) INSTRUCTIONS Preheat oven 180ºc / 160º fan and line a baking tray In a large mixing bowl combine the ground oat flour, coconut, baking powder and bicarbonate soda Add the the lightly beaten egg, honey, chopped cherries and almond extract into the dry ingredients and mix everything together until all of it is combined. The mixture should be quite stiff, well able to hold itself, but should be a little wet, enough to drop of a spoon. SUGAR FREE- FAT FREE - EGG FREE NO KITCHEN SCALES REQUIRED YOU WILL NEED TWO STANDARD EMPTY CLEAN BAKED BEAN OR SOUP CANS INGREDIENTS ½ cup of dried dates ½ cup of hot water ½ cup self raising flour ½ cup self raising wholemeal flour ½ tsp baking powder 2 tbsp fat free greek yogurt METHOD Preheat oven to 180ºc / 160º fan Grease and line your two clean cans, including the bottom of the can (fiddly I know and be careful of any sharp edges) Put the hot water in a medium mixing bowl Stir in the dates and baking powder, then the remaining ingredients Keep stirring until your mixture is caramel like, it will still have the lumps of dates but hopefully no flour lumps Spoon the mixture evenly into your two prepared cans, then pop on on some make shift lids using tin foil Place on a baking tray and pop into the oven and bake for approx 50 minutes Cool in the can for around 5-10 minutes, remove and cool on a wire rack Slice an...

NO ADDED SUGAR - FAT FREE - EGG FREE WHAT YOU WILL NEED Food blender/processor Set of measuring cups and spoons Mixing bowl & spoon Muffin tray INGREDIENTS 2 cups of dried dates, halved 1 cup of boiling water 1 cup of self raising wholemeal flour 1 cup of self raising flour 1 tsp baking powder ½ cup chopped dried dates ¾ cup of dairy free milk METHOD 1. Preheat oven 190ºc / 170º fan 2. Soak the 2 cups of dates in the boiling water for approx 30 minutes 3. Place the soaked dates and water into a food blender and blend until you get a smooth paste consistency 4. In a mixing bowl pour in the date paste and your dairy free milk, mix well  5. Add the rest of your ingredients and mix well so everything is combined 6. Pour your mixture evenly into your muffin tray 7. Place in the oven on the middle shelf and bake for approx 25-30 minutes

With so few calories per muffin you could much away on two of these and not feel any guilt! I did a comparison on blueberry muffins, supermarket blueberry muffins can have anything from 270-300 calories per muffin! My muffins approx 70 calories each! EGG FREE - FAT FREE - SUGAR FREE - FLOURLESS Makes 9 biscuits Less than 40 calories per biscuit INGREDIENTS  40g oats ½ tsp baking powder 1 tbsp chai seeds  2 tbsp water 20g sultanas ½ tsp mixed spice METHOD Preheat your oven at 180ºc / 160º fan In a small dish soak the chia seeds with the 2 tbsp of cold water for approx 10 minutes until the mixture has turned into a gel Place all the ingredients including the chia gel into a blender/processor and blitz everything together, but making sure you don't turn the mixture into a paste, you want to keep some texture Using your hands or a spoon place walnut size balls onto a lined baking tray, flatten down each one to get a biscuit shape (you should get 9 biscuits) Place in the oven on the middle shelf and bake for approx 12-15 minutes Once baked leave on the tray to cool for 5 minutes then transfer to a cooling rack

4 Ingredient No Bake Tropical Granola

INGREDIENTS 1 ½ cups of oats  1 ½ cups tropical mix 2 tbsp coconut oil, melted 1 tbsp clear honey METHOD  In a medium frying pan over a medium heat, toast the oats, stirring regularly, until the oats are golden Add the coconut oil and mix well making sure all the oats are coated, pressing down with the back of your spoon helps the oats adsorb the coconut oil Add the honey and stir well making sure everything is coated Add the tropical mix, mix well making sure everything is evenly distributed Remove from the heat, pour onto a lined baking tray and allow to cool  Can be stored in an airtight container for about a week
