You can nibble away happily with these delicious mini cheese biscuits knowing that they are low in fat, low in calories and high in protein The perfect healthy snack! These cheesy biscuits are free from flour, have no egg and no added fat INGREDIENTS ½ cup ground oats/oat flour  20g Eatlean Spreadable Cheese 20g Eatlean grated cheese 1 tbsp water Oven temperature - 180ºc / 160º fan Bake time - 15 minutes METHOD Preheat oven 180ºc / 160º fan Mix all the ingredients together to form a dough. Easy Apple and Cinnamon Muffins!

These Apple and Cinnamon Muffins are moist, have a subtle cinnamon flavor, and the perfect texture. No mixer or scales are needed, this really probably is the easiest Apple and Cinnamon Muffin recipe your ever bake! Prep time - 10 minutes INGREDIENTS 1 cup of apple sauce 1 egg, lightly whisked 2 cups self-raising flour 1 tsp ground cinnamon METHOD  Preheat oven 160ºc / 180º fan and grease your muffin tray Put your apple sauce and whisked egg into a bowl and mix well Then add the rest of the ingredients and mix until all is combined Pour the mixture evenly into your prepared muffin tray and bake in the oven on the middle shelf for approx 20-25 minutes or until a skewer/cocktail stick comes out clean. If you find your muffins browning before they are baked, cover loosely with some foil Leave your muffins in the muffin tray for approx 10 minutes before removing onto a wire cooling rack

Buttery Shortbread Thins

Just 3 ingredients to make these delicious melt in the mouth shortbread thins. Not so healthy though, none the less they go down a treat with a hot afternoon cuppa INGREDIENTS 24g caster sugar 34g butter, sofened 44g plain flour METHOD Beat together the caster sugar and butter in a small bowl until pale and smooth. Sift the flour into the mixture, mix until all is combined and use your hands to bring the dough together Roll the dough into a sausage shape, wrap tightly in some cling film and pop in the fridge for at least an hour or until the dough is solid Preheat your oven to 200ºc / 180º fan and line a baking tray Unwrap the cling film and slice the sausage into rounds, approx 8mm in thickness. Place onto your lined baking tray and bake for approx 15 minutes or until the edges are beginning to turn brown/golden Leave to cool for 5 minutes then transfer to a wire rack to cool completely

Dairy and Yeast Free Healthy Spiced Fruit Bread Buns

FAT FREE - EGG FREE - NO ADDED SUGAR - DAIRY FREE - YEAST FREE Just four simple ingredients to make these delicious spiced fruit bread buns! No scales required just a set of measuring cups and spoons! If you don't have measuring cups don't worry, you can use a normal cup or mug as long as you use the same one for all the measurements. The bigger the cup/mug the more buns you make I used a small mug and made 9 buns The recipe does say white self-raising flour, but I tried it with half wholemeal flour and half white self- raising flour. Having made these buns both ways, I found using all white self-raising flour gives you a lighter and better rise to the buns as I found the wholemeal makes the buns heavier and they didn't seem to rise as much. This soda bread has to be simplest bread to make, needing just 4 basic ingredients, you can have a super tasty fresh loaf of bread in under an hour! No scales are required for this recipe just a normal household drinking mug INGREDIENTS  1 mug of sultanas 1 mug of boiling water 2 mugs self-raising flour METHOD 1. Preheat oven 200c / 180 fan 2. Line a loaf tin with parchment paper  3. Put sultanas in a mixing bowl and add boiling water, leave to soak until water has cooled 4. Sift in the flour and mix until all is combined, if you find mixture is to thick just add a little more water 5. Pour mixture into your prepared loaf tin 6. Place in the oven on middle shelf, bake for approx 40-45 minutes, to check if loaf is cooked use a skewer and insert into middle   of loaf, if it comes out clean loaf is baked if not continue to bake, if your loaf is browning quicker than baking, place some silver foil over the top of the loaf

This Guilt Free Strawberry Mousse is  high in protein low calorie only requires 2 ingredients fat free and does seem to keep you fuller for longer It's airy like a mousse but thick! This recipe makes three good servings Each serving is approx 90 calories INGREDIENTS 1 sachet of sugar free strawberry jelly 1 tub of plain quark or fat free greek yogurt 250-300g  METHOD 1. Make jelly up to half a pint, leave to cool until luke warm (not setting) 2. WHAT YOU WILL NEED Mini food processor or something similar  mini loaf tin 2 mixing bowls scales measuring spoons  INGREDIENTS  120g oats 1 tsp baking powder 1/2 tsp mixed spice 1 tsp cinnamon 2 eggs 4 tbsp fat free/low fat gas mark greek yogurt 1 tbsp mixed peel 1 tbsp dried cranberries chopped 1 tbsp sultanas chopped  METHOD 1. Preheat your oven to 180c/350f (gas mark 4) 2. Place oats in a mini food blender and blitz until fine like a flour consistency 3. For this recipe you will require a mini food processor or something similar for this recipe to work Makes 8-9 biscuits Approx 40-45 calories per biscuit INGREDIENTS 40g oats 1/2 tsp baking powder 1-2 tsp almond essence 4 glacier cherry's chopped 1 small egg  METHOD  1. This is my take on a healthy Christmas Cake, its packed full  of juicy fruit and has all the taste of the festive period. This granola is simple, but packed full of nutty flavours and sweetness from the juicy cranberries and sultanas. Ideal for breakfast or as topping on yogurt INGREDIENTS 400g oats 60g sunflower seed and/or pumpkin seed (I did 30g of each) 95g mixed nut selection roughly chopped 50g Dairy Free spread 3 tbsp of clear honey 45g cranberries 30g sultanas  METHOD Preheat oven 180c, 160c fan, Gas 4 1. In a mixing bowl put the oats, seeds nuts, cranberries and sultanas and mix well 2. Melt the dairy free spread and honey using the microwave, then stir into your dry mixture 3. Tip your granola onto a non stick baking tray and place in the oven on the middle shelf for approx 15 minutes, then give a quick stir, return to the oven for a further 10-15 minutes 4. Leave granola in the baking tray to cool completely 5. The granola can be stored in an airtight container for approx 1 week
