Healthy Flourless 4 Ingredient Banana Bread Muffins

Just 4 ingredients to make these healthy muffins, they're moist, oaty and naturally sweetened from the bananas Prep time 5 minutes Cook time 30 minutes Total time 35 minutes INGREDIENTS 3 medium ripe bananas 2 cups of oats 2 eggs 1 tsp bicarbonate of soda ¼ cup honey (optional) METHOD Preheat oven 180ºc / 160º fan Lightly grease a muffin tray (you may need more than one) Add all the ingredients to a food processor and blend until smooth and all the ingredients are combined Pour your mixture evenly into your muffin tray (s) Place in the oven on the middle shelf and bake for approx 30-35 minutes, checking after 20 minutes. To check if your muffins are baked, insert a skewer or toothpick into the centre of a muffin, if it comes out clean muffins are baked, if not continue to bake Let your muffins cool for at least 10-15 minutes before removing from the muffin tray, then transfer them to a cooling rack

FAT FREE - EGG FREE - NO ADDED SUGAR - DAIRY FREE - YEAST FREE Just four simple ingredients to make these delicious spiced fruit bread buns! No scales required just a set of measuring cups and spoons! If you don't have measuring cups don't worry, you can use a normal cup or mug as long as you use the same one for all the measurements. The bigger the cup/mug the more buns you make I used a small mug and made 9 buns The recipe does say white self-raising flour, but I tried it with half wholemeal flour and half white self- raising flour. Having made these buns both ways, I found using all white self-raising flour gives you a lighter and better rise to the buns as I found the wholemeal makes the buns heavier and they didn't seem to rise as much. Makes 10 slices INGREDIENTS 3 ripe bananas 2 eggs 120g low fat greek yogurt 115g honey 1 teaspoon baking soda 195g self raising wholemeal flour 100g dried dates chopped in half PREPARATION 1. Preheat the oven to 180c / 160 fan 2. In a medium bowl, mash the bananas 3. Mix eggs, yogurt, honey, baking soda and chopped dates into the banana mixture 4. Add the flour and mix well until all is combined 5. Pour the mixture into a greased or lined bread tin (approx 23 x 13cm) 6. A healthy scrumptious old fashioned Gluten-free, sugar-free, fat-free Bread Pudding just like you had at grandma’s.

Bread Pudding Ingredients 500g gluten free wholemeal bread 500g sultanas 1 1/2 tbsp mixed spice 600ml semi skimmed milk 2 large eggs beaten 1-2 tbsp of dark brown sugar (optional) Method Tear the bread into a large mixing bowl and add the sultanas and mixed spice. Pour  in the milk, then scrunch through your fingers to mix everything well and completely break up the bread. Add the eggs and sugar if using, stir well and set aside for approx 15 minutes. Heat oven to 180/160c fan/gas 4. Butter and line the base of a 20cm non-stick cake tin. Tip pudding  mixture into the tin. Bake for approx 1 1/2 hours until firm and golden, if pudding starts to brown early on cove with foil. Turn out of the tin onto a wire rack and leave to cool, or can be eaten hot from the oven.
