What you will need:
Mini food processor
Loaf tray (mini)
Mixing bowl
Scales
Measuring spoons
INGREDIENTS
90g oats
4 tbsp natural or greek yogurt (fat free)
2 eggs
1 tsp almond extract
42g (2 1/2 tbsp) sugar free strawberry jam
Chopped almonds to decorate (optional)
METHOD
Preheat oven to 180c
1. In a mini food processor blitz the oats
2. In a mixing bowl, add the oats, yogurt, eggs and almond extract and mix until all is combined
3. Carefully swirl the strawberry jam into the oat mix, so you have like a ripple effect
4. Spoon the oat mix into your prepared loaf or muffin tin and decorate with the chopped almonds
5. Place in oven on middle shelf for approx 30 minutes
6. Allow to cool for about 5-10 minutes, then carefully remove from tray and place on a cooling rack to cool completely
