INGREDIENTS
1 mug of boiling water
3/4 mug sultana's
150g finely grated carrot
1tsp mixed spice
1tsp ground cinnamon
1tsp baking powder
2 mugs self-raising flour
METHOD
Preheat oven 180 fan
Grease & line a loaf tin
In a mixing bowl place the sultana's and boiling water, leave to soak until water has cooled
Once cooled, stir in the carrot, then sieve in the flour, baking powder, mixed spice & cinnamon. Mix well until all the ingredients are combined. If you find the mixture to dry just add a little more water.
Scoop into your loaf tin and place in the oven on the middle shelf and bake for approx 30 minutes, or until cooked. (if loaf is starting to brown but is not cooked through, cover loosely with some silver foil)
When cooked carefully remove from tin and place on a cooling rack
NOTES
This loaf freezes well, if you decide to freeze I'd recommend slicing the loaf first, that way you can take out a slice as and when you want
