Healthy Tea Loaf - Fat free, sugar free & egg free! Only 4 simple ingredients!

What you will need –
  1. A mug, any size – the bigger the mug the bigger the cake
  2. Loaf tin
  3. Grease-proof paper to line the tin
  4. Mixing bowl
 Ingredients –
  1. 2 mugs of self raising flour – either white or wholemeal ( do half and half)
  2. 1 mug of sultanas
  3. 1½ mugof stewed black tea
  4. 1 TSP of baking powder (optional, but find that the cake turns out better with it)
Oven temperature 160 fan/180, middle shelf
Method –
Place a mug of sultanas into a mixing bowl and pour in 1½ mugs of freshly brewed tea, leave to soak for approx 2-3 hours
Measure out two mugs of flour along with the baking powder (if using) and then mix into the wet mixture. If you find the mixture todry just add a little extra liquid. (It is trial and error)
Place mixture into loaf tin and bake for approx 40-50 minutes or until skewer/knife comes out reasonably clean
Top Tips you don’t necessarily have to use tea you can use any liquid, black coffee works well and still keeps the cake fat free, or if that doesn’t particularly matter to you, you can use flavoured milk.
To add extra flavour to the loaf you can add flavouring, for example ginger, mixed spice or almond essence.
If you fancy a bit more substance to your loaf try adding some walnuts or dates, but remember whatever ingredients you add it must only be a mug in total, so for example you could use half a mug of sultanas and half a mug of walnuts.

2 ingredient healthy, chewy, Date and Oat Slice

INGREDIENTS  18 dried dates (approx) 2-3 tbsp boiling water 1 cup of porridge oats WHAT YOU WILL NEED 1 sheet of parchment paper Rolling pin Food processor METHOD Slice dates in half, place in a small bowl and add the boiling water, leave for approx 15-20 minutes to soak Preheat oven 170 fan/190c Put porridge oats in a food processor, then add the dates along with the water they were soaking in, and blend until you get a stick consistency, if mixture is too dry just add a little water. Turn out the mixture onto one half of the parchment paper, carefully gather all the mixture up and then fold over the half of the paper to cover the mixture, this will stop the mixture sticking to the rolling pin in the next stage. With the rolling pin, roll out your mixture to about 5mm thick and cut into slices, place carefully onto a lined baking tray, and repeat. Place in oven on middle shelf and bake for approx 15/20 minutes After removing from the oven leave to cool
