A healthy scrumptious old fashioned Gluten-free, sugar-free, fat-free Bread Pudding just like you had at grandma’s.
Bread Pudding
Ingredients
500g gluten free wholemeal bread
500g sultanas
1 1/2 tbsp mixed spice
600ml semi skimmed milk
2 large eggs beaten
1-2 tbsp of dark brown sugar (optional)
Method
Tear the bread into a large mixing bowl and add the sultanas and mixed spice. Pour in the milk, then scrunch through your fingers to mix everything well and completely break up the bread. Add the eggs and sugar if using, stir well and set aside for approx 15 minutes.
Heat oven to 180/160c fan/gas 4. Butter and line the base of a 20cm non-stick cake tin. Tip pudding mixture into the tin. Bake for approx 1 1/2 hours until firm and golden, if pudding starts to brown early on cove with foil. Turn out of the tin onto a wire rack and leave to cool, or can be eaten hot from the oven.
