Carrot Jack Bake
Approx 60 calories a slice (makes 5 slices)

INGREDIENTS
1 cup of oats
60g peeled & grated carrot
1 tsp baking powder
1 tsp ground cinnamon
1 tsp ground ginger
1/4 tsp ground nutmeg (optional)
3 tbsp fat free natural yogurt
1 egg
1 tsp vanilla extract (optional)
Baking dish approx 10cm by 16cm
180c for approx 30/40 minutes
METHOD
Preheat your oven at 180 degrees
In a mixing bowl, combine ALL the ingredients and mix well
Now spray a small baking dish with frylight and pour in oaty mixture
Bake in the oven for 30/40 minutes until golden with cracking on the top
