These date and walnut cottage cheese muffins have it all! They're soft, moist & crunchy. Plus its quick and easy preparation makes them the perfect muffins for busy families!
These cottage cheese muffins need just 7 ingredients and can be whipped up in as little as 15 minutes!
INGREDIENTS
300g fat free cottage cheese
2 eggs
1 cup of self raising flour
1 cup of self raising wholemeal flour
1 teaspoon of baking powder
1/4 cup of roughly chopped walnuts
1/4 cup of dried dates chopped (you can add more if you like)
METHOD
Set the oven to 180c / 160 fan
1. In a bowl, mix well the cottage cheese and eggs
2. Sift in the flour and baking powder, and continue to mix until all is combined
3. Stir in the dates and walnuts
4. Scoop/pour the dough into your muffin tray
5. Place in the oven on the middle shelf and bake for approx 15 minutes or until a skewer inserted comes out clean
6. Leave to cool in muffin tray for approx 10 minutes, then place on a cooling rack to cool completely (I found placing the muffins upside down on the cooling rack worked better as sometimes the muffins would collapse
