These sugar-free Banana Cookies are a taste sensation that will make you go bananas for more!

INGREDIENTS
2 very ripe bananas
80ml almond milk or any other plant based milk
125g plain flour
½ tsp baking powder
INSTRUCTIONS
Preheat the oven 180ºc / 160ºc fan
Peel the bananas and mash them in a medium size mixing bowl
Add the almond milk and mix to combine
Add the flour and baking powder, mix well until you get a thick batter
Using an ice-cream scoop or a tablespoon scoop equal size blobs of the batter onto a lined baking tray, making sure you leave enough room between each of them as they will spread (you may need more than one tray)
Bake the cookies for approx 10-15 minutes, or until starting to take on a golden brown colour
Let the cookies cool for 5 minutes then transfer carefully to a cooling rack
