Sugar Free Apple and Banana Sponge Cake



This sponge cake is easy to make, and takes no time at all to prepare

Full of fruity goodness and contains no added sugar making it a guilt free pleasure!

INGREDIENTS

150g plain flour
1 ½ tsp baking powder
100ml semi-skimmed milk
1 egg
1 tsp cinnamon
40g low fat olive spread, melted (or butter of choice)
1 medium apple, peeled, cored and chopped
1 ripe banana, well mashed (lump free)

METHOD

Preheat oven 200ºC / 180º FAN and line a cake tin with grease proof paper

Sift the flour, baking powder and cinnamon into a mixing bowl and stir

Put the milk, egg and melted low fat spread in a jug or small bowl and beat together

Add the apple, banana and wet ingredients from the jug to the flour, stir until just combined. Do not over-mix

Pour the mixture into the cake tin and bake for 20-25 minutes until the cake has risen and starts taking on a golden colour

Carefully place the cake on a wire rack to cool
