Ready in less than 30 minutes! These custard powder cookies are a buttery treat Initially you get a satisfying crunch, then the cookie just melts away in your mouth. Super simple to make No kitchen scales required just a set of measuring spoons INGREDIENTS 3 tbsp sugar (36g) 3 tbsp butter (42g) 1 egg, medium 3 tbsp custard powder (24g) 5 tbsp self-raising flour (40g) ½ tsp vanilla essence I swapped three of my ingredients to healthier alternatives  Sugar - 1 tbsp ½ spoon sugar Butter  - light olive spread custard powder - reduced sugar custard powder METHOD Preheat oven 160ºc / 140º fan Cream together the butter and sugar Beat in the egg and vanilla essence Stir in the custard powder and flour until everything is well combined Spoon teaspoons of the mixture onto a lined baking tray, making sure you leave room between each as they will spread, press down each cookie lightly with the back of a fork or spoon Bake

Flourless Chewy Cherry Bakewell Spongy Oat Cookies

A quick, easy healthier sweet treat any time of day! These cookies are a cross between a sponge cake and a cookie texture READY IN LESS THAN 30 MINUTES! Makes 4 large cookies INGREDIENTS  50g (½ cup) ground oat flour 25g (¼ cup) desiccated coconut ¼ tsp baking powder ¼ baking soda 1 medium egg lightly beaten 40g honey ½ tsp almond extract (not essence) 4 glacier cherries, finely chopped (optional) INSTRUCTIONS Preheat oven 180ºc / 160º fan and line a baking tray In a large mixing bowl combine the ground oat flour, coconut, baking powder and bicarbonate soda Add the the lightly beaten egg, honey, chopped cherries and almond extract into the dry ingredients and mix everything together until all of it is combined. The mixture should be quite stiff, well able to hold itself, but should be a little wet, enough to drop of a spoon. If your mix is too dry add 1-2 tsps of water and mix again Using a spoon, spoon 4 circles of the mixture

To make these scrumptious Nutty Nibble Chocolate Covered Irresistible Fruit Slices all you need is a food processor, 3 ingredients and 30 minutes! VEGAN AND PALEO - FRIENDLY INGREDIENTS 1 cup dried dates packed, soaked for 15 minutes and then drained 1 ½ cups of nuts - I used a mixture of walnuts, pecans, hazelnuts, almonds and cashews 1 bar of chocolate of choice - I used a white organic bar  (Vegan & paleo friendly dependant on chocolate you use) METHOD Line an 8 x 8 baking tray/dish with some grease proof paper and place to one side In your food processor add the drained dates and nuts. Healthy Flourless 4 Ingredient Banana Bread Muffins

Just 4 ingredients to make these healthy muffins, they're moist, oaty and naturally sweetened from the bananas Prep time 5 minutes Cook time 30 minutes Total time 35 minutes INGREDIENTS 3 medium ripe bananas 2 cups of oats 2 eggs 1 tsp bicarbonate of soda ¼ cup honey (optional) METHOD Preheat oven 180ºc / 160º fan Lightly grease a muffin tray (you may need more than one) Add all the ingredients to a food processor and blend until smooth and all the ingredients are combined Pour your mixture evenly into your muffin tray (s) Place in the oven on the middle shelf and bake for approx 30-35 minutes, checking after 20 minutes. This is an easy recipe to follow and takes very little time to prepare NO ADDED SUGAR - NO ADDED FAT For this recipe you will need: A standard drinking mug Mixing bowl and spoon Teaspoon INGREDIENTS  1 mug water (boiling) 50g/2oz cocoa powder ½ mug sultanas ¼ mug hazelnuts, roughly chopped 1 egg lightly whisked 2 mugs of self-raising flour 1 tsp baking powder (optional) ½ mug of white chocolate chips METHOD Pour the water into a mixing bowl and gently whisk in the cocoa powder, then add the sultanas, leave to soak until the water has cooled Preheat oven 200ºc / 180º fan Add the egg to the sultana mixture and stir, then sieve the flour and baking powder into the mixture, followed by hazelnuts and chocolate chips, mix well until everything is combined Pour your mixture into a lined baking tray (high sided) or a brownie tray and place in the oven on the middle shelf and bake for approx 45-50 minutes or until baked. You can nibble away happily with these delicious mini cheese biscuits knowing that they are low in fat, low in calories and high in protein The perfect healthy snack!
