INGREDIENTS
2 medium sweet potatoes (approx 320g with skin on)
1 cup of oat flour (approx 100g)
125g good quality dark chocolate, roughly chopped
METHOD
Top and tail the sweet potatoes, prick them and microwave until cooked
Once cool enough to handle, scoop out the hot potato and mix with the chocolate and oat flour. (the heat from the potato will melt the chocolate)
Scoop the sweet potato brownie mixture into a square lined dish (approx 8") then place in the fridge to firm up for at least an hour to set
Cut into 16 squares, and enjoy your healthy chocolate treat!
Store in the fridge in an airtight container for up to five days
