Soft Bake Healthy Date Rolls



We've all heard of Fig Rolls and we've probably all tried a fig roll at some point in our life, but now there's the Date Roll! A lovely sweet date centre encased with oats and wholewheat making it a healthy wholesome sweet snack.

WHAT YOU WILL NEED

Food processor
Mixing bowl and spoon
Measuring cups and spoons
Grease proof paper
Square baking tray (9"x 9") 

INGREDIENTS 

FOR THE BISCUIT
1 cup (100g) porridge oats
¾ cup (90g) wholemeal self-raising flour
1 medium egg
1½ tsp vanilla essence
3 tbsp (45ml) honey

FOR THE FILLING
1 cup of dried dates
½ cup of boiling water

METHOD 

1. Cut the dates in half, place in a bowl and soak using the boiling water. Leave to soak until the water has cooled.

2. Once your dates have cooled, preheat your oven to 160ºc / 140ºfan / 325ºF, and line your square baking tray

3. Tip the dates and water into your food processor and blitz until you get a nearly smooth paste. Scoop your mixture into a plastic container and place in your freezer for about 30 minutes, just longer enough to chill/firm up but not freeze, as it needs to be spreadable

4. Come back to your recipe in 30 minutes. Have a cuppa and sit down

5.  Take your mixing bowl and place all your dry biscuit ingredients into it and mix, then add the rest of the biscuit ingredients, mix well until all is thoroughly combined

6. Split your mixture in half and place half in your lined tray and press down firmly and level

7. Get your date paste and spoon on top of your biscuit mixture about ½ - ¾cm thick, then cover with the remaining biscuit mixture

8. Place in the oven on the middle shelf and bake for 30 minutes or until golden brown

9. Once baked slice carefully while still in the tray and to cool for approx 10-15 minutes then lift out using the grease proof paper and lay out on a cooling rack to cool completely before separating your Date Rolls
