Healthy Wholemeal Muesli Breakfast Scones



Your be mistaken to think that your in some up market coffee shop having these Muesli Scones for breakfast! Packed full of healthy goodness, with the delicate flavours of the fruit and nuts. These scones are the perfect breakfast to set you up for the morning ahead, there're light and full of flavour and won't weigh you down.  

INGREDIENTS

1 ½  cup wholemeal self-raising flour
½  cup self-raising flour
1 tsp baking powder (optional)
¼ cup dried cranberries
¼ cup dried chopped dates
¼ cup pumpkin seeds
¼ sunflower seeds
1 large egg, size does matter as dough will not hold together with small or medium egg
2 tbsp clear honey
Milk in case mixture is to dry

INSTRUCTIONS

Preheat oven - 160ºc / 180º fan / 350ºF

1. In a large bowl, mix both flours and baking powder

2. Stir in the dried fruit, seeds and nuts

3. In a small bowl combine the egg and honey

4. Stir the wet ingredients into the dry ones

5. Using your hands form the mixture into a dough, if dough is to dry add a little milk

6. Shape your dough into a square about 2 inch in thickness

7. Cut your dough into squares

8. Place your scones onto your baking tray and pop into oven on the middle shelf and bake for approx 10-15 minutes, check your scones after 10 minutes of baking. To check if your scones are baked, tap the bottom of a scone and if you hear a hollow sound then your scones are baked

9. Carefully remove from baking tray and place on a cooling rack to cool
