3 Ingredient Healthy Chocolate Brownies
This is an easy recipe to follow, completely foolproof.
Loaded with fibre and nutrition.
The brownies are moist, fudgy and with a rich deep chocolate flavour with a slight bitterness, but makes up for that with the sweet almonds and sweet potato.
Time 1hr
Makes approx 9 brownies
INGREDIENTS -
2 medium sweet potatoes (300g with skin on)
120g Ground Almonds
125g Dark Chocolate (vegan)
METHOD -
Cook the sweet potatoes, microwave or in the oven
(if you bake the potato it cooks in its own juices and then is not to wet like boiling or steaming)
Once cool enough to handle scoop out the hot potato and mix with chocolate and almonds
Place mixture into a square dish approx 8" and then pop into fridge for an or so to set.
Cut into squares and enjoy your brownies.
Can be stored in the fridge for up to 5 days, that's if they last that long!
